I think a lot of costumers would like that... I am (re)building my Madonna fanclub site.
And it is awesome how you can put all those dates/concerts into events. But I also have content pages for all tours... it would we so cool if I could show ONLY one concert category on that page...
I have made several categories, for each concert a category. And when adding the dates I chose the right category... So why am I chosing/making categories if I cannot do anything with it?
Is it something you could make/fix in a future update?

For all of Madonna's world tours I am making an item in Events. I also choose the right category for eacht tour (tour 1, tour 2, etc. ).
When you look at http://www.madonna.nl/m3d3ll1n/events-list/ you see all events from ALL categories.
Is it possible to make a page where there are events showing from only 1 category?

The categories of the event custom post types can be used only with Essential Grid (where you can use it to build event grids with image cover etc..).
The categories are not used in your event custom template at this time.
You are the first user who request it. If we have more requests about it, we will implement this feature. Its a great idea!
