Our podcast is showing up in iTunes in the "Visual Arts" category which isn't right. It didn't use to be in this category. I've selected the correct category in the Sonnaar theme backend but it hasn't made any change in iTunes. Also, the sub-category is showing only "Array" no actual sub categories. What can I do, the itunes:category appears to be wrong.

Which theme version are you using? We have fixed an issue with category/subcategory in the RSS feed in our latest version

upgraded to 4.8. Still have the same issue ... seems to be producing the wrong ‘iTunes:category’ in the rss fees

It's actually showing as Arts ▸ Visual Arts, Arts ▸ Design in the RSS feed
From the screenshot you have provided, you are still NOT running version 4.8
How do I update my theme ?

I deleted the old Theme and installed 4.8.
Doing it again. Let's see!
