1. I want to switch my theme. Will I need to reinstall the plugins? Will this cause trouble on my site? How do I go about doing so?
2. Also there are current menu items in my theme that I desire to change. Will deleting or removing these menu items cause errors or trouble? Will they be deleted permanently? I don't want to permanently delete them...
1. you can only import 1 theme demo at a time. When you import a new theme demo, it will completely overwrite your website content by the new theme demo and you will lose your existing images, pages, and contents.
The plugins will remains tho.
What I always recommend when using a new WordPress theme is to develop the "new" website on a staging server with a fresh copy of WordPress. So start with a clean copy of WordPress, install the theme and its demo. By doing this, your existing website will continue to run, and you will have all the time you want to develop/design the new website on your staging server.
You could also export/import the old blog posts of your old website onto your new website by going to WP-Admin > Tools > Import/Export.
When you are ready to launch your new website, you will just have to point your domain name to the staging server so it becomes your new "live" server.
2. if you want to manage your menu items, go to wp-admin > appearance > menu
the items in this sections are basically just virtual links to your pages. by deleted menu items, it does not delete your page or posts.

Thanks Max, that's good info! I'm still technically building the site, so I'm not worried about losing anything. However, I've just purchased elementor pro and the elementor template addons. Will this allow me to take the current theme I'm using and add the functionality of the other theme demos to it's elements? I also bought the unlimited Sonaar package...

Just a heads up, you will get errors if you are using wp bakery builder and elementor builder at the same time. I had this trouble yesterday..lol

You cannot use 2 different page builder on the same site.
use only elementor.
