Which steps do I need to go through in order to get this to work? When I go to essential grid to make my edits, I'm getting an error that reads "AJAX can't fetch..."
You need to understand that if you want to automatically retreive your Youtube channel's playlist, you must connect your grid to your Google API Key that you must generate from your google account. This is quiet complex but its what Google requires if you want to display a YouTube channel on a website.
If you have issue with your google api, you will need to check with the Google team as we dont have (and we are not allowed to) access / control your google account.
The screenshot you are showing me is only showing the Naming tab. The API Keys must be entered in the Source tab: https://d.pr/i/1MXxfC
Now, if this is too complicated for you, the other way is to only embed 1 by 1 the youtube videos by simply using the Video Elementor widget: https://d.pr/i/oXhC6n
What about the menu? In your theme demo for the crew, I don't see any page title/headings. When working in my own website. I'm having issues with a gap between my menu and my page content. When I adjusted the bottom margin for the menu I didn't see any changes. So I'm having to change the background color to make every page blend with the menu. When I click on show menu over content, the menu cuts off some of the text in my pages.
I dont know just by looking at your website...And to prevent numerous back and forths by guessing whats not working here and there, Id prefer to check directly in your page settings, layout and theme options how its all sets.

As Alex said, I must login into your dashboard to see what's not set correctly.
To hide page title, you simply have to click this option: https://d.pr/i/RHvj9g
for the show menu over content option and the gap, I must login into your dashboard

What do I need to set my settings to in order to get the menu to connect with the top of the content

This will avoid a lot of back and forth.
