Very simple. your menu text color settings in WP-Admin > Theme Options > Menu options is set to white and your background menu is set to white. So its white on white.

The setup of your blog page was not set correctly.
The post page had to be set to none (select). https://d.pr/i/xrZVbO
The design of that page can now be edited with Elementor.
For the site title showing up, where do you see it ? send me screenshot as I cant replicate this issue

Thanks for editing, but when I add a new page, the "white space" at the top of the page is still there- what am I missing?
