You are talking about the single Playlist post template. Two different templates are available. The default one and, as you have mentioned, the "Album with Side Cover". To change it you have to edit the playlist. Please look here.
Those templates are hardcoded. If you have PHP knowledge, you can modified them in the child theme folder. Otherwise, you still can create a new template with elementor Pro. But in both case, those kind of customization is beyonf the scope of our support.
How can I modify/design the page that pops up when you click on a playlist? Where is that located?

Sure. Here is a screenshot. When you click on one of your playlists, a page opens. I want to be able to modify that page.
