Hi Jon, 
Since 2017 we have released the feature to built the header through the elementor editor, but you site still use the classic menu. All style option for the classic menu are available through wp-admin>theme options>menu options. 
If you wanna use the Elementor header feature, please provide a login credential to the wp-admin and I will import you the new elementor header content. No worries, you will be allow to goes back with the classic menu if you dont like it.

You can edit the header through wp-admin>header & footer>header

If you want to go back to the classic menu, please go to wp-admin>theme options>menu options
And select "Classic" as the menu type
