We initially used a someone to set up a staging site. We went through this person (their account) to pay for the theme. Now that it's time to renew, they are no longer helping with websites.
Is it possible to set up a new account, pay for sonar and use that key on our website? This gives us an account in our name and we can continue the annual payment ourselves.

Sure. The best way to do this, is to buy a sonaar license (https://sonaar.io/pricing) and then you will get your own license key.
Once purchased, just go to wp-admin > Theme Options > Dashboard and enter your new license key there.
