I am finally*** finalizing my website for public consumption and would like to know: how do I specify a custom image that will be scraped when I post my site to social media? Presently, when I share to FB, I am getting an image from one of my « Projects. » I would like to have a better/ default image.
Feature request perhaps? Or … j’ai pesé sur le mauvais piton?

You can use plugin Yoast SEO to manage this.
