I am trying to locate the setting to change how the posts are displayed when you select a blog "category"
As you can see at the above link, when you click on any particular category it displays the full posts for every post in the given category. I would like it to act more like a filter and just display the title/preview for all the posts in the category. Is this inherent to the theme? I cannot find where to change this setting.
Two templates are available for WordPress default blog archive pages: "list" and "classic." To change this, go to wp-admin > theme options > post settings and modify the "Posts Archive Default Template" option.
The customization options for this page are limited. I recommend using Essential Grid. You should have a grid named "News - 3 columns." Use this grid and add a category filter to it. You need first to go to wp-admin>essential grid. Edit the "News - 3 columns" grid. Click on the "filter" tab and insert a category filter. When it is done. Create a new page and insert the "News - 3 columns" grid.
