-Bg color (hover) in main menu desktop. How do I change these colors? 

Go to wp-admin>theme options>menu options
And replace all color options set with yellow.
  - Main Item Hover Background Color
  - Sub Item Hover Background Color

-LISTEN NOW button in hero. How can I get this button to prompt the media player in the bottom like it does on click and play in the "music" section?

Edit the Homepage with the elementor editor
Select the "listen now" Button
Open the "Lauch the audioplayer" panel
And Select a playlist from here:

Is there a way to get the grid to display in the center? I tried to change the row # to 1 but it made it way too big 

The grid template doesnt make sens for you, I recommend you to use this template https://demo.sonaar.io/thecrew-elementor/music-list/
Or use the single playlist page as the music page until you have more than one album.

How do I edit the yellow text in “booking”?

Edit the contact page through the elementor editor.
Select the booking form.
Click on the STYLE tab
Open the LABEL panel
And change the color here:

You have to edit the grid skin.
Go to wp-admin>essential grid>item skin editor
Edit the "News Skin Masonery" skin.
Select the "Date" layer
Click on the STYLE tab
And change the font color

Do the same with the "View more" Layer
